This is a way to really “fun up” an otherwise pretty basic affair:

One with her little hat on, one off, to show off her hairstyle. :laugh:

Hollow out a tomato, make a quick mustard vinaigrette, toss chopped onion, dill pickle strips, bologna and cheese strips in it, then stuff the tomatoes. Done.

We had this for a weeknight supper inside, but this is begging for a Sunday afternoon, out on the back deck, nice glass of wine (or a crisp Italian beer)…very much good!
 
Arrived back home this evening.
I'd asked my son to remove a container of something brown from the freezer and chucked together the now snappily named 'Brown Pie' 😂
Everyone really liked it. I wonder what it was 😆

Used hash browns for the topping. That was ok but Rosti potatoes are IMO much better, they have real onion in them rather than being flavoured with onion powder. I felt the topping looked good, was nice n crunchy but lacked a little bit of flavour in comparison.
 
Lebanese today. I had loads of fresh parsley and some wild tomatoes ( to make tabbouleh), some chickpeas to make hummus ( got that one wrong - they were Borlotti/cranberry beans, but I made the hummus anyway) and some divine Lebanese cracked olives. Plus about 500 gms minced meat, with which I made Fried Kibbe. Delish!
