Whole Foods scallops are dry pack.You have to thoroughly dry them out. Otherwise they don't want to brown in the pan. Dry packed scallops are supposed to better for searing, but I have not encountered them in my shopping.

Two of my local grocery stores have dry pack scallops. I only ever tried searing ones that had been thawed from frozen one time. The fresh dry pack ones tasted better anyway, regardless of sear. If I ever have to use frozen again I'll know what to do, but I likely won't buy them again.Whole Foods scallops are dry pack.

I ate my leftover Leek and Chicken Baked Medjool Date Loaf today.
I ate it cold as I didn't want to dry it out by microwaving. It was very good. The Dates give it an incredible buttery sweet flavor that makes the Leek a secondary flavor.
You can put a cup of water in the microwave when reheating which will prevent the food from drying out.
