It's what the ticket said at the market. Well, you never know around here - fish gets sold under all kinds of names...Skate wing shouldn't take much time to cook at all so I'm puzzled. That actually doesn't look like a skate wing - or if it is, its only part of one.

Thanks - the batter was crisp and tasty but the restaurants have it lighter and a little airier - next time I will try with a bit more baking soda to see if it bubbles up more and maybe fry it a bit shorter time so it doesn't darken so much.Looks pretty damn good to me!

The worst repeat offender here is what is sold as cod. It isn't - it's Patagonian Toothfish which they are hawking under that moniker (and not for cheap!) - a far cry from true Atlantic Cod that I am used to in England.
