I ate 1/4 of a salmon and bacon bagel (with cream cheese, shallot and capers) for breakfast and brought a banana and a tuna sandwich to eat on the plane (plus the little bags of snack mix they give out).
 
Skate wing shouldn't take much time to cook at all so I'm puzzled. :scratchhead: That actually doesn't look like a skate wing - or if it is, its only part of one.

It's what the ticket said at the market. Well, you never know around here - fish gets sold under all kinds of names...

At the market yesterday I asked the fella what these were - he said 'monkfish'. In fairness to the stallholders, English is not their first language (most of them speak some Chinese dialect as their first - not even Mandarin) so I'll give them some leeway, but come on - there might be a bad translation but in what universe are these monkfish? 🤣

The worst repeat offender here is what is sold as cod. It isn't - it's Patagonian Toothfish which they are hawking under that moniker (and not for cheap!) - a far cry from true Atlantic Cod that I am used to in England.

Patagonian tooth fish is sold as Chilean sea bass in the US. :rolleyes:

Thanks - the batter was crisp and tasty but the restaurants have it lighter and a little airier - next time I will try with a bit more baking soda to see if it bubbles up more and maybe fry it a bit shorter time so it doesn't darken so much.
I found using both baking powder and super cold fizzy water combined gives a very light tempura.

I’d still eat the hell out of those though!
