Grated zucchini need some time salted to let go of the excess liquid, some patties are in plan.
In the meantime I had the last spoons of the chard and celery soup with the lovely pumpkin seed oil, sunflower seeds and a dash of soy and the second gluten free baguette toasted.
Here they are, zucchini /soy flour/ egg patties. Romana salad with a few black olives. Soba noodles in some soy sauce.
Strangely enough, I seem to be fed up with dark chocolate. At least until tomorrow. I have had my 2 cubes earlier today. Seems to suffice. Or maybe I' ve had enough greens...that's a provoking thought!
This time, soy flour, soy milk, egg pancakes with berries jam and a fresh peach..really soft and fluffy the pancakes. They may not appear that way in the pic...
DH & I did a grocery haul for my Mom this morning and we decided that we'd all have lunch together at one of the dining rooms at her Senior Living Community.
DH's Chef Salad
Both Mom and I ordered the Tuna Salad.
When DH & I got home and settled in for the evening, we both said, no dinner tonight, still too full.
HMMM ...
I needed just a little somethin' ... a 12 year olds' dream meal for Moi, breaded Mozzarella Cheese Sticks and a Diet Coke ... DH said that he'd have something later and that he'd get it himself.
Lunch was actually an extremely late breakfast: sausages, eggs, mushrooms, fried potatoes, beans.
Dinner was Muttakos sambhar and Baingan ka salaan which, translated into English is lentil, cabbage and onion stew and Hyderabadi style aubergines!
Just coffee so far, and a 5 km walk, during which I finished the coffee out of a thermos.
Beautiful sunny summer day.
Picked up groceries, will visit my parents in a short while, then will try to make gluten free Zeppole...for a late breakfast.
