What did you cook or eat today (March 2025)

Grilled cheese with Swiss, muenster, smoked cheddar and smoked gruyere.
Soup topped with fresh shaved Asiago.

Monday here and last night we had a 3kg of rolled roast beef with roasted potatoes, carrots, pumpkin, parsnip and sweet potatoes. Peas and Yorkshire puds store bought. And 1 liter of rich dark gravy.
It was as harry (12 yo grandson) said exceptional. And I had to agree. The beef was perfect. I just ordered another piece of meat to replace it.

You know those meals that don't look like much, but are actually nice (really nice will need a little work on the spices, both of us thought it needed more)... well this is one of those.

Aubergine, apricot and chickpea casserole (?) might be the best name... served over spelt pasta.
It's meant to be made with raisins but 1, we don't have any and 2) as a North African dish, I thought apricots which I do have would be more appropriate.

I had a fried egg in a muffin, and a baked potato with cheese (too busy to mess with food).
As planned I made fruit crumble bars, I used a mix of apple, strawberry and blueberry. The blueberries were very juicy, so the filling was a bit more liquid than expected.

The great thing about these is normally they can easily be eaten in the hand (but mine can't today :laugh:), or pop a slice in a dish, fast warm up in the microwave and serve with cream / ice cream.
